Quick Roasted Chicken with
Mustard & Garlic
This is an easy to fix mustardy
chicken. Split the chick into quarters to
speed up cooking time.
Ingredients:

1 four pound chicken
-
4 - minced garlic cloves
-
2 tablespoons Dijon mustard
-
2 tablespoons dry white
wine
-
2 tablespoons extra virgin
olive oil
-
1 tablespoon soy sauce
-
1 teaspoon Tabasco
-
2 teaspoons Special
Shit
Preheat oven to 450.
Quarter the chicken and remove
the backbone.
In a bowl, mix all of the remaining
ingredients.
Turn the chicken breast-side
down and spread it with half of the mustard
mixture. Set chicken in a large skillet skin-side
up and spread with the remaining mustard mixture.
Set the skillet over high heat
and cook the chicken until it starts to brown
(5 minutes or so). Transfer the skillet to
the oven and roast the chick for 30 minutes
or until done. Let the chicken rest 5 minutes
and cut into 8 pieces.
Enjoy with a nice chardonnay.
