Sautéed Tilapia
This is a great summer recipe that you can use to impress your friends. I’ve even seen people lick their plates (really!). And the best part is that it is so easy to make.

Ingredients
* 1 ½ pounds fresh tilapia fillets
* ½ cup all flour
* ¼ tsp salt
* ½ tsp garlic powder
* Aw Shit
* ½ tsp minced garlic
* ½ cup white cooking wine
* 1 Tbsp lime juice
* 1-2 Tbsp butter or margarine
* 1 Tbsp olive oil
* 3 green onions, chopped
* 1 chopped Roma tomato
* 1 sliced avocado

Preparation

1. Rinse the tilapia fillets and pat them dry. Sprinkle with Aw Shit; be careful because it can get really spicy, really fast.
2. Put the flour on a plate and season it with the salt and garlic powder. Dredge the tilapia fillets in the seasoned flour and gently shake them to remove the excess flour.
3. Heat the olive oil in a large frying pan over a medium-high heat. Place the tilapia fillets (without overlapping) and saute until golden brown on the bottom (3-4 minutes).
4. Turn the fish and cook until opaque throughout (1-2 minutes). Place the sauteed tilapia fillets on a serving plate and cover them with aluminum foil to keep warm.
5. Add the butter, wine, garlic, and lime juice to the pan and bring it to a boil. Simmer until the mixture is reduced by half (2-3 minutes). Sprinkle in a little flour if you want it to thicken even more.
6. Heat for 30-40 seconds and pour the sauce over the tilapia fillets just before serving. Sprinkle on the green onions, and garnish with tomatoes and avocado.
