Mo’s Chicken Enchiladas Recipe

Mo's chicken enchiladas are more like a chicken casserole than a rolled up Tex-Mex style enchiladas. Like most of the recipes featured here, these are easy to make and require little time to prepare.

Ingredients:

* 1Tbsp butter
* 1/3 cup chopped onions 
* 2 chopped jalapenos
* 6 corn tortillas
* 2 12.5oz cans chicken
* 2 cans Cream of Chicken soup
* 6 slices American Cheese
* 1 tsp Aw Shit


Preparation:

1. Melt butter in a 2 quart saucepan. Saute chopped onions and jalapenos until tender.
2. Add chicken, Cream of Chicken soup and Aw Shit. Stir and heat thoroughly.
3. Tear 3 corn tortillas into small pieces.
4. Spray a 2 quart casserole dish with non-stick cooking spray. Spread the pieces of corn tortillas in the bottom of the casserole dish.
5. Pour 1/2 of the chicken mixture on top of the corn tortillas. Place 3 slices of cheese on top of the chicken mixture.
6. Tear the last 3 corn tortillas into small pieces and place on top of the chicken mixtures. Add the rest of the chicken mixture. Top with the remaining slices of cheese.
7. Cover and microwave until the cheese is melted and the mixture is thoroughly heated.
8. Serve with crackers or tortilla chips.
