Whew! What a Month!

 

 Happy New Year

 

When you stop to think about everything that's happened since Thanksgiving, it's hard to believe you got so much accomplished! All that shopping, cooking, prepping, travelling, and partying... crazy, but fun! It's also hard to believe that it's over, and another year is already starting. But January is generally uneventful, so it's a good time to unwind after all the December craziness, and to take stock of your life... and your kitchen.

Recipe: Bacon & Roasted Garlic Mashed Potatoes with SpecialShit
Bacon & Roasted Garlic Mashed Potatoes with SpecialShit Recipe

Bacon. Mashed Potatoes. SpecialShit. There's no way you can possibly go wrong with this side dish! 
    

 

Ingredients 

* 1 head of garlic
* 1 Tbsp olive oil
* 3 lbs russet potatoes, peeled and cut into 1-inch cubes
* 2 tsp SpecialShit
* 1 tsp salt
* 1 cup half-and-half
* 4 Tbsp butter, cut into small pieces
* 4 slices bacon, cooked & crumbled
* 2 green onions, thinly sliced


Preparation  

1. 1. Heat oven to 350 degrees. Cut off the very top of the garlic head. Drizzle olive oil into garlic and wrap in foil. Place in oven for 30 minutes. Let cool.
2. Place potatoes in a Dutch oven, cover with water, and add 1tsp salt to the water. Bring to a boil and simmer for about 15 minutes, or until potatoes are tender. Drain well and set them aside in another bowl.
3. Place half-and-half in Dutch oven and heat over medium heat until warm. Remove from heat and add potatoes. Add butter pieces.
4. Squeeze garlic from skins into the Dutch oven. Add the SpecialShit. Mash well with a potato masher.
5. Mix in the bacon and green onions.
