Citrus Cornish Game Hens

This is such a great substitute for Chicken these days and so easy to fix. Give it a try you may be pleasantly surprised.

Ingredients

  • 2 Rock Cornish Game hens (or more by doubling the recipe)
  • 1 Can of Mandarin Oranges
  • Balsamic Vinegar
  • Good Shit

Preparation:

1. I like to tie the drumsticks and wings together but it is definitely an option

2. Season Liberally with GoodShit

3. Insert the mandarian orange sections ito the body cavity (of the hen)

4. Mix equal parts orange juice from the orange can and Balsamic Vinegar

5. Drizzle some of this on the inside of the bird

6. Bake in a 350° oven, basting every 15 minutes with the orange juice/vinegar mixture

7. After 75 minutes (or until the juices run clear) remove from oven and let rest for 5 minutes to distribute the juices

I then cut them in half and serve. Green beans like this recipe go great with the Bird. Enjoy with a nice full bodied Chardonnay, like Mayo® or Pichetti® and you'll think you're in heaven
