 Catfish with Ketchup Sauce Recipe

 

Baked Catfish with Ketchup Sauce
(from the kitchen of Ed Koenig)

This catfish is easy to make and can be ready in just a few minutes.  Add Mashed Potatoes and a salad and enjoy this unusual dish.

Ingredients:

  • 3/4 cup Ketchup

  • 1/4 Cup Butter or Margarine

  • 1 TBSP Balsamic Vinegar

  • 1 TBSP Worcestershire Sauce

  • 1 TSP Dijon Mustard

  • 1/2 TSP Aw Shit

  • 1/2 TSP Cajun Seasoning

  • 1 Clove Garlic

  • 1/2 TSP Crushed Red Pepper

  • 1/4 Cup Green Onions

  • 4 Catfish Fillets

  • Special Shit

Stir together ketchup and the next nine ingredients in a small Saucepan over medium low heat.  Cook ketchup mixture 10 minutes, stirring occasionally.  Sprinkle ketchup mixture with pepper and Special Shit.  Arrange the catfish fillets in an even layer in a lightly greased dish.  Pour Sauce over fish.  Bake at 400 degrees for 10-12 minutes or until fish flakes with a fork. 

Goes great with a cold beer.
